Korean Rice Balls

This is my quick version of Korean rice balls also known as jumeok bap. I use ingredients that I know my little kiddos will eat. The best part about these rice balls is masking in greens. I sneak in spinach and my kids still love it!

Here are the ingredients:

1 cup Korean rice or sushi rice (when we have neither we just use jasmine rice)

1/2 cup cooked spam (or meat of your choice)

1/2 cup sautéed spinach (chopped)

1 cooked egg (scrambled)

1 tablespoon sesame oil

seaweed

Directions:

Cook the rice and spam according to the package instructions and set aside. Sauté the spinach for just a couple minutes and set aside. Once it cools, chop the spinach. Scramble the eggs and set aside as well.

Take all the main ingredients and put them in a mixing bowl. Then add the oil and seaweed. I always crumble the seaweed and add a handful but will taste as I go. Be sure to wear gloves to keep your hands from getting all oily and from the rice sticking. Once you’ve mixed it well then go ahead and start rolling them into balls. Here are photos! It’s an easy snack/lunch for the kiddos and they get protein and their veggies at once!

Brayden and Nova are usually really good at eating their vegetables but they aren’t big fans of eggs. Well, Nova can’t eat eggs (for now) anyway. She gets a rash when eating egg in non-baked form. So we don’t give her eggs. So when I make this, I end up making a version without the eggs for my little girl.

A quick Youtube search will pull up other versions of these rice balls. When I use to make them for the big kid (first born) I added seaweed seasoning which you can find anywhere, even Walmart. Have fun with the recipe and feel free to make it your own. Enjoy!
